More About Cucumber Sandwich
Cucumber, creamy herby cheese and soft airy bread makes these cool and light cucumber sandwich. This sandwich is fairly simple to make and doesn’t need much prep time. The process is quick and easy and since it is a cold sandwich it does not require any grilling or toasting. So ya! This recipe is time efficient.
All you need is grated cucumber, some cream cheese and herbs of your choice for this recipe.
I make my own cream cheese at home, the recipe of which you can find here: Homemade Cream Cheese. Trust me, homemade cream cheese tastes so so good and it takes just 10 minutes to make. It makes these sandwiches light and oh! so flavourful. However, it is totally fine to use store bought cream cheese if you don’t want to go through that hassle.

- Coming down to ingredients, the main element of this recipe is of course cream cheese. If cream cheese is not easily available in your region, you can totally check out this Homemade Cream Cheese Recipe.

- For vegetables, I have used grated cucumber. Peel the cucumber and grate it. You need to squeeze out all the water from cucumber before adding it to cream cheese. You can also make your own version of the recipe. Feel free to add more vegetables like chopped bell pepper (green, yellow and red) or grated carrots.

- In herbs I have added some fresh sweet basil leaves in cream cheese for a refreshing flavour. However, if you cannot find sweet basil leaves, you can totally use some mint or parsley leaves here. Cucumber with mint makes a great combination.

- For the seasoning I have used salt, freshly ground black pepper and Italian seasoning. If you are not making it for kids, you can add some finely chopped green or red chilies or red chili flakes.
- I have also added some raw minced garlic in this recipe. Garlic gives a fantastic taste to the cream cheese spread. If you do not wish to add raw garlic, you can totally use garlic powder or omit it completely.

- Add cucumber, herbs, garlic and seasoning in cream cheese. Mix really well. Check for salt.
- Take 2 bread slices. Spread the cream cheese mixture generously on one slice. I like to add little on the other side as well. Seal both the slices and cut in desired shape. I have used wholewheat bread here. You can choose which ever bread you like for this recipe; white bread, multigrain bread, milk bread. They all work great. Just make sure the bread you are using is fresh and soft.

- If you do not like raw bread, you can totally toast the slices first in a toaster and then spread the filling. However, I do not recommended grilling or toasting the sandwich because cucumber will loose it’s nutritional value on heating and the texture and taste will not remain the same.
- Serve immediately or keep it covered in the refrigerator for 30 minutes and serve them cold on a hot summery day.
How To Keep Sandwich From Getting Soggy
These sandwiches stay great for 2-3 hours without turning soggy. However, if you want to make them a day in advance, you can run a risk of mushy sandwiches. Follow these tips for super fresh and non-soggy sandwiches.
- Squeeze out the juice: After grating the cucumber, sprinkle salt on cucumber and let it sit for 15 minutes. Then squeeze out the juice to draw excess moisture.
- Use enough cream cheese spread: Cream cheese spread will act as a barrier, keeping the cucumber liquid from turning the bread soft. So, use more of cream cheese as compared to cucumber.
Leftovers and Storage
Cucumber sandwich do not keep well for long. Try to consume them within couple of hours of making. However, if you have leftovers, then wrap the sandwich tightly with cling film and store in an airtight container in refrigerator for no more than a day.
Healthy Cucumber Sandwich for Kids
Ingredients
- 1 cup Cream Cheese
- 1 small English Cucumber grated
- 3 tbsps Sweet Basil Leaves you can either use mint or parsley leaves
- 2 cloves Garlic minced; optional
- 1/2 tsp Italian Seasoning optional
- Salt and Pepper to taste
- 8 slices Wholewheat Bread
Instructions
- Peel cucumber and grate it. Squeeze out the juice completely.
- Take cream cheese in a large bowl. To it add grated cucumber, salt, pepper, Italian seasoning, minced garlic and finely chopped sweet basil leaves.
- Mix it all really well. Check for salt and seasoning.
- Take two bread slices. Spread the cucumber cream cheese mix generously on one side and seal it with another slice.
- Slice the bread slices in the shape you prefer. I like triangular shape.
- Serve immediately or keep it covered in the refrigerator for 30 minutes and enjoy them cold.
